1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

Zest of 1 lemon

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tablespoon lemon juice

8 oz semi-sweet chocolate, chopped

1 tablespoon coconut oil (or vegetable oil)

Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9x9 inch baking dish to form an even layer. Bake for 8-10 minutes until golden and set. Allow to cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together with an electric mixer until smooth and creamy. Add the vanilla extract, eggs (one at a time), sour cream, and lemon zest, mixing until fully incorporated and the mixture is silky smooth.

      Pour on the cheesecake layer: Pour the cheesecake filling over the cooled crust and spread evenly. Bake in the preheated oven for 30-35 minutes, or until the center is set and the edges start to slightly pull away from the pan. Remove from the oven and let it cool at room temperature.
