8 oz (225 g) cream cheese, softened

1/4 cup (50 g) granulated sugar

1/2 tsp vanilla extract

1 egg yolk

For the Cookie Dough:

1 1/2 cups (190 g) all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup (113 g) unsalted butter, softened

1/2 cup (100 g) brown sugar, packed

1/4 cup (50 g) granulated sugar

1 tsp vanilla extract

1 large egg

1 cup (175 g) semi-sweet chocolate chips

Make the Cheesecake Filling: In a medium bowl, beat together the softened cream cheese, 1/4 cup granulated sugar, and vanilla extract with an electric mixer until smooth. Add the egg yolk and mix until fully incorporated. Set aside in the refrigerator to firm up while you prepare the cookie dough.

    Prepare the Cookie Dough: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. In a large mixing bowl, cream the softened butter, brown sugar, and remaining 1/4 cup granulated sugar with the electric mixer until light and fluffy, about 2-3 minutes.

      Combine the Mixtures: Add the egg and vanilla extract to the butter mixture, beating until combined. Gradually add in the flour mixture, mixing until just combined. Fold in the chocolate chips.
