Ingredients

2 ripe bananas (mashed)

1/3 cup unsalted butter (melted)

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1 large egg (beaten)

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 1/2 cups all-purpose flour

1 cup chocolate chips (semi-sweet or dark)

Optional: 1/2 teaspoon ground cinnamon (for extra flavor)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups with non-stick spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted butter. Stir in the brown sugar and granulated sugar until well blended. Then add the beaten egg and vanilla extract. Mix until smooth and homogeneous.

Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and flour (along with the optional ground cinnamon if using).

Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the banana mixture, stirring gently with a spatula or wooden spoon. Be careful not to over-mix; it’s okay if a few lumps remain.

Add Chocolate Chips: Fold in the chocolate chips gently, ensuring they’re evenly distributed throughout the batter.

Fill the Muffin Tins: Using a spoon or an ice cream scoop, fill each muffin cup about 3/4 full with the batter.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

Cool the Muffins: Once baked, remove the muffins from the oven and allow them to cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

Serve and Enjoy: Enjoy these soft and moist chocolate chip banana muffins warm or at room temperature. They make for a delightful breakfast or snack!
