3 ripe bananas (mashed)

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup granulated sugar

1/4 cup light brown sugar (packed)

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 teaspoon cinnamon (optional)

1 1/2 cups all-purpose flour

3/4 cup semi-sweet chocolate chips

Extra chocolate chips for topping (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas with the melted coconut oil. Stir well until fully integrated. Add the granulated sugar, brown sugar, egg, and vanilla extract. Mix until all the wet ingredients are combined smoothly.

      Add Dry Ingredients: Sprinkle the baking soda and salt over the banana mixture and stir to combine. If you're using cinnamon, add it here as well. Gradually fold in the all-purpose flour until no dry spots remain (do not overmix).

        Incorporate Chocolate Chips: Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the batter.

          Fill Muffin Tin: Using a spoon or ice cream scoop, portion the batter into the prepared muffin tin, filling each cup about 3/4 full. If desired, top the batter with extra chocolate chips for extra indulgence.
