Ingredients

For the crust:

1 1/2 cups chocolate cookie crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream

1/4 cup heavy cream

1 cup cherry pie filling

1/2 cup chocolate chips (semi-sweet)

For the topping:

1 cup whipped cream

1/2 cup chocolate chips (for garnish)

Fresh cherries, for garnish (optional)

Instructions

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the chocolate cookie crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and cool completely.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add in the granulated sugar and beat until combined.

                - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and heavy cream until the mixture is fluffy and well incorporated.

                  Combine cherries and chocolate:

                    - Gently fold in the cherry pie filling and chocolate chips into the cream cheese mixture. Be careful not to overmix; a few swirls of cherries and chocolate will create a marbled effect.

                      Bake the cheesecake:

                        - Pour the cheesecake filling over the cooled chocolate cookie crust in the springform pan. Smooth the top with a spatula.

                          - Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let it cool at room temperature for about an hour before transferring it to the refrigerator.

                            Chill and serve:

                              - Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set fully.

                                - Before serving, pipe whipped cream on top and sprinkle with chocolate chips. Add fresh cherries for an extra touch.
