For the Chimichurri Sauce:

1 cup fresh parsley leaves, finely chopped

1/2 cup fresh cilantro leaves, finely chopped

1/4 cup red wine vinegar

4 garlic cloves, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup extra-virgin olive oil

Juice of 1 lemon

For the Chicken Skewers:

1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Salt and pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before grilling)

Instructions
 

Prepare the Chimichurri Sauce:

    - In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, red pepper flakes, salt, and black pepper.

      - Slowly whisk in the olive oil until emulsified. Stir in the lemon juice. Reserve 1/2 cup of the sauce for serving, and use the rest for marinating the chicken.

        Marinate the Chicken:

          - In a large mixing bowl, place the chicken pieces and season with salt and pepper. Pour the remaining chimichurri sauce over the chicken, ensuring all pieces are well-coated.

            - Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

              Prepare the Skewers:

                - Preheat your grill to medium-high heat. Thread the marinated chicken onto the skewers, alternating with pieces of bell peppers and red onion. Leave a little space between each piece for even cooking.

                  Grill the Skewers:

                    - Once the grill is hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. It should reach an internal temperature of 165°F (75°C).

                      Serve:

                        - Remove the skewers from the grill and let them rest for 5 minutes. Serve warm with the reserved chimichurri sauce drizzled on top or on the side for dipping. Enjoy!
