For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust to taste)

Zest of 1 lime

Juice of 2 limes

Salt and pepper, to taste

Fresh cilantro, for garnish

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper, to taste

For Assembling:

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges, for serving

Extra cilantro, for garnish

Marinate the Shrimp: In a medium bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, cayenne pepper, lime zest, lime juice, salt, and pepper. Add the shrimp to the bowl and toss to coat evenly. Let it marinate for at least 15 minutes to allow the flavors to intensify.

    Prepare the Slaw: While the shrimp marinates, prepare the slaw. In a large mixing bowl, combine the green cabbage, red cabbage, grated carrot, and chopped cilantro. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until everything is well-coated. Set aside.

      Cook the Shrimp: Preheat a skillet or grill over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque.

        Warm the Tortillas: While the shrimp are cooking, warm the tortillas in a separate skillet or directly over the flame of a gas stove, about 30 seconds on each side until soft and pliable.

          Assemble the Tacos: Lay the warm tortillas on a serving platter. Top each tortilla with a generous portion of the slaw, followed by the cooked shrimp. Add slices of avocado on top, and garnish with fresh cilantro.

            Serve: Squeeze a little extra lime juice over the tacos before serving and enjoy with lime wedges on the side!
