Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon chili powder

½ teaspoon cumin

½ teaspoon garlic powder

½ teaspoon smoked paprika

Zest of 1 lime

Juice of 1 lime

Salt, to taste

Fresh cilantro, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures the chickpeas roast perfectly crispy.

Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove excess moisture.

Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with olive oil, chili powder, cumin, garlic powder, smoked paprika, lime zest, and a pinch of salt. Toss well until all the chickpeas are evenly coated with the seasoning.

Roast the Chickpeas: Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned chickpeas in a single layer on the sheet. Roast them in the preheated oven for about 25-30 minutes, stirring halfway through to ensure even crispiness.

Add Lime Juice: Once the chickpeas are golden brown and crispy, remove them from the oven. Drizzle fresh lime juice over the hot chickpeas and toss to coat. Taste and adjust salt if necessary.

Garnish and Serve: Allow the chickpeas to cool slightly. If desired, sprinkle chopped cilantro on top for added freshness. Serve them warm as a snack or sprinkle them on salads for extra crunch!
