Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1-2 teaspoons red chili flakes (adjust to taste)

Zest of 1 lime

Juice of 2 limes

1 tablespoon honey or maple syrup

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Shrimp: In a large bowl, combine the olive oil, minced garlic, red chili flakes, lime zest, lime juice, and honey. Add the shrimp and toss to coat well. Cover and let marinate for at least 15 minutes at room temperature (or up to 1 hour in the refrigerator for more intense flavor).

Prepare the Skillet: Heat a large skillet over medium-high heat. Once hot, add a splash of olive oil.

Cook the Shrimp: Remove the shrimp from the marinade (reserve the marinade) and add to the skillet in a single layer. Cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque. Do not overcrowd the pan; cook in batches if necessary.

Add the Marinade: Pour the reserved marinade into the skillet. Bring to a simmer and cook for an additional 2 minutes, allowing the shrimp to soak up the delicious flavors and thicken the sauce slightly.

Season and Serve: Season with salt and pepper to taste. Remove from heat, and garnish with fresh cilantro. Serve hot with lime wedges on the side for an extra zing.
