Chili Cheddar Puff Pastry Bites

1 sheet of puff pastry (thawed if frozen)

1 cup shredded sharp cheddar cheese

1 cup cooked chili (homemade or canned)

1 egg (beaten, for egg wash)

1 tablespoon fresh chives (chopped, for garnish)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: jalapeño slices for extra heat

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface until it’s about 1/8 inch thick. Cut the pastry into squares, roughly 3x3 inches in size.

      Fill the Pastry: In a medium bowl, mix the cooked chili with the shredded cheddar cheese, cumin, smoked paprika, salt, and pepper. If you like it spicy, add jalapeño slices to the mixture.

        Assemble the Bites: Place about 1 tablespoon of the chili cheese mixture in the center of each puff pastry square. Fold the corners of the pastry over the filling to create a pocket, and pinch to seal tightly.

          Egg Wash: Brush the tops of the pastry bites with the beaten egg to give them a golden finish when baked.

            Bake: Arrange the filled pastry bites on the prepared baking sheet and bake in the preheated oven for about 18-20 minutes, or until puffed and golden brown.

              Serve: Remove from the oven and let cool slightly. Garnish with fresh chopped chives and serve warm.
