Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 jalapeño, seeded and minced (optional for extra heat)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

4 cups chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 can (14.5 oz) diced tomatoes, with juices

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

Salt and pepper, to taste

1 lime, juiced

Fresh cilantro, for garnish

Tortilla strips, for serving

Avocado slices, for serving

Shredded cheese (cheddar or queso fresco), for serving (optional)

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until softened.

    Add the Vegetables: Stir in the minced garlic, red and green bell peppers, and jalapeño (if using). Cook for another 3-4 minutes until the peppers are tender.

      Spice It Up: Sprinkle the cumin, chili powder, and smoked paprika into the pot. Stir well to combine and let the spices toast for about 1 minute.

        Add the Broth: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce to a simmer.

          Incorporate the Chicken and Beans: Add the shredded chicken, diced tomatoes (with juices), black beans, corn, and season with salt and pepper. Let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.

            Finish with Lime: Just before serving, stir in the lime juice to brighten the soup.

              Garnish & Serve: Ladle the soup into bowls, and top with fresh cilantro, crispy tortilla strips, avocado slices, and shredded cheese if desired. Enjoy!
