Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon lime juice

Salt and pepper to taste

For the Strawberry Slaw:

2 cups green cabbage, finely shredded

1 cup strawberries, hulled and sliced thinly

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

For Assembly:

8 small corn tortillas

Lime wedges, for serving

Extra cilantro, for garnish

Instructions

Marinate the Chicken: In a bowl, combine the olive oil, smoked paprika, cumin, garlic powder, onion powder, lime juice, salt, and pepper. Add the chicken thighs and coat them well in the marinade. Cover and let marinate for at least 30 minutes in the refrigerator.

Make the Strawberry Slaw: In a large mixing bowl, combine the shredded cabbage, sliced strawberries, red onion, and chopped cilantro. In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined.

Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 5-7 minutes per side, or until the chicken is caramelized and cooked through (internal temperature of 165°F). Remove from the heat and let rest for a few minutes before slicing into strips.

Warm the Tortillas: In a dry skillet or on a grill, warm the corn tortillas for about 30 seconds on each side, until they are pliable and slightly toasted.

Assemble the Tacos: Place a generous amount of sliced chicken on each tortilla. Top with a handful of strawberry slaw and garnish with cilantro. Serve with lime wedges on the side for added zest.

Enjoy: Squeeze fresh lime juice over the tacos just before eating for an extra burst of flavor!
