Chicken & Stuffing Bake

4 boneless, skinless chicken breasts

1 box (6 oz) of stuffing mix (your favorite flavor)

1 cup chicken broth

1 cup cream of chicken soup (or homemade)

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

1 tsp dried rosemary

½ cup chopped celery

½ cup chopped onions

1 cup shredded cheddar cheese (optional)

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, thyme, rosemary, salt, and pepper. Heat the olive oil in a large skillet over medium heat and sear the chicken breasts for about 3-4 minutes on each side, until golden brown. They will finish cooking in the oven.

      Make the Stuffing: In a mixing bowl, combine the stuffing mix, chicken broth, cream of chicken soup, chopped celery, and chopped onions. Stir until well mixed and moistened.

        Assemble the Bake: In a greased 9x13 inch baking dish, spread the stuffing mixture evenly across the bottom. Place the seared chicken breasts on top of the stuffing.

          Add Cheese (Optional): If using, sprinkle the shredded cheddar cheese over the chicken.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the stuffing is bubbling.

              Rest and Serve: Once done, remove from the oven and let it rest for 5-10 minutes. Garnish with fresh parsley if desired. Serve hot and enjoy your comforting meal!
