Chicken Scampi with Garlic Parmesan Rice

For the Chicken Scampi:

1.5 lbs boneless, skinless chicken breast, cut into bite-sized pieces

4 tablespoons unsalted butter

4 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, juiced and zested

1 cup chicken broth

1/2 cup dry white wine (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

For the Garlic Parmesan Rice:

1 cup jasmine or basmati rice

2 cups chicken broth

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

Salt to taste

Instructions
 

Prepare the Garlic Parmesan Rice:

    - In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

      - Add the rice to the saucepan and toast for 2-3 minutes, stirring frequently.

        - Pour in 2 cups of chicken broth and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15-18 minutes or until the rice is cooked and the liquid is absorbed.

          - Once done, remove from heat, stir in Parmesan cheese, and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

            Cook the Chicken Scampi:

              - In a large skillet, heat 4 tablespoons of olive oil and 4 tablespoons of butter over medium-high heat.

                - Season the chicken pieces with salt and pepper. Add the chicken to the skillet in a single layer and cook until golden brown on all sides, about 6-8 minutes. Remove and set aside.

                  - In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, taking care not to burn the garlic.

                    - Deglaze the pan with white wine (if using) and let it reduce by half, scraping up the brown bits from the bottom.

                      - Pour in the chicken broth and add the lemon juice and zest. Bring to a simmer and let it cook for 3-4 minutes.

                        - Return the chicken to the skillet and cook for another 3-5 minutes, until heated through and the sauce has thickened slightly. Adjust seasoning with salt and pepper.

                          Serve:

                            - Serve the Chicken Scampi over a bed of Garlic Parmesan Rice and garnish with fresh parsley.
