Ingredients

For the Chicken Ricotta Meatballs:

1 pound ground chicken

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 large egg

1 cup breadcrumbs (preferably Italian seasoned)

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

For the Spinach Alfredo Sauce:

2 tablespoons unsalted butter

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1 cup fresh spinach, wilted

1/4 teaspoon nutmeg

Salt and pepper to taste

Optional: Additional grated Parmesan for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meatball Mixture: In a large mixing bowl, combine ground chicken, ricotta cheese, grated Parmesan, egg, breadcrumbs, minced garlic, oregano, salt, and black pepper. Mix until just combined; be careful not to overmix.

Shape the Meatballs: Using your hands, form the mixture into small meatballs, about 1-1.5 inches in diameter. Place the meatballs on the prepared baking sheet, spacing them evenly apart.

Bake the Meatballs: Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and golden brown.

Make the Spinach Alfredo Sauce: While the meatballs are baking, melt the butter in a large saucepan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Cream and Cheese: Pour in the heavy cream, stirring constantly. Reduce the heat to low, and gradually add the shredded mozzarella cheese, stirring until melted and smooth.

Incorporate Spinach and Season: Stir in the wilted spinach, nutmeg, salt, and pepper to taste. Simmer the sauce for a few more minutes until heated through and slightly thickened.

Combine Meatballs and Sauce: Once the meatballs are done, remove them from the oven and gently transfer them to the sauce. Let them simmer together for a couple of minutes so the flavors meld.

Serve and Garnish: Serve the meatballs with a generous ladle of spinach Alfredo sauce on top. Garnish with fresh parsley and extra Parmesan if desired.

Enjoy your comforting Chicken Ricotta Meatballs with Spinach Alfredo Sauce!
