Chicken, Mushroom, and Spinach Lasagna

9 lasagna noodles (preferably oven-ready)

2 cups cooked chicken, shredded

8 ounces mushrooms, sliced (button or cremini)

4 cups fresh spinach, roughly chopped

2 cups ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

1 medium onion, diced

3 cloves garlic, minced

2 cups marinara sauce

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant and translucent, about 3-4 minutes. Add the sliced mushrooms and cook for another 5 minutes until browned. Add the chopped spinach, season with salt, pepper, oregano, and basil. Cook until the spinach wilts, about 2-3 minutes. Remove from heat.

      Prepare the Cheese Mixture: In a bowl, combine the ricotta cheese with half of the grated Parmesan (½ cup) and season with a pinch of salt and pepper. Mix until well combined.

        Assemble the Lasagna: In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then layer half of the shredded chicken, followed by half of the sautéed vegetable mixture, and a sprinkle of mozzarella cheese (about ⅓ cup). Repeat the layering process: noodles, remaining ricotta mixture, remaining chicken, remaining sautéed vegetables, and another ⅓ cup of mozzarella cheese. Top with the final three noodles, a layer of marinara sauce, the remaining mozzarella, and the rest of the Parmesan cheese.

          Bake the Lasagna: Cover the dish with aluminum foil, ensuring it doesn’t touch the cheese. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbling.

            Let it Rest: Once baked, remove the lasagna from the oven and let it sit for about 10-15 minutes before slicing. This helps the layers set and makes serving easier.
