Chicken Fajita Casserole Recipe

1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 bell pepper (red or green), sliced

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or canned)

1 cup salsa (your choice of spiciness)

2 cups cooked rice (white or brown)

2 cups shredded cheddar cheese

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, heat the olive oil. Once hot, add the diced chicken and cook for about 5-7 minutes until it's no longer pink.

      Add in the sliced bell pepper, onion, and minced garlic. Sauté for another 5 minutes until the vegetables are soft.

        Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes until everything is well coated with the spices.

          In a large mixing bowl, combine the cooked chicken mixture with the black beans, corn, and salsa. Mix well to combine.

            Fold in the cooked rice until distributed evenly throughout the mixture.

              Transfer half of the mixture to a greased 9x13 inch (3-quart) casserole dish. Sprinkle half of the shredded cheddar cheese over the first layer.

                Pour the remaining mixture on top and finish with the rest of the cheese.

                  Cover the casserole dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Once done, let it cool for a few minutes before serving. Garnish with fresh cilantro and sliced jalapeños if desired. Serve with sour cream on the side.
