Chicken Fajita Casserole

2 cups cooked chicken, shredded or diced

1 large onion, sliced

2 bell peppers (red and green), thinly sliced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup salsa

1 cup cooked rice (white or brown)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

2 cups shredded cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish (optional)

Tortilla chips, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet over medium heat, add a splash of olive oil. Sauté the sliced onions and bell peppers until they are soft and slightly caramelized, about 5-7 minutes. Remove from heat.

      Mix the Filling: In a large mixing bowl, combine the shredded chicken, sautéed vegetables, black beans, corn, salsa, cooked rice, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix until evenly incorporated.

        Layer Casserole: In a greased 9x13 inch baking dish, spread half of the chicken mixture evenly. Sprinkle 1 cup of shredded cheese over the top. Then layer the remaining chicken mixture and top with the remaining cheese.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

            Garnish and Serve: Once done, remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro if desired. Serve hot with tortilla chips on the side for added crunch.
