Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

6 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup frozen peas

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon dried rosemary (or herbs of choice)

1 cup milk

1/4 cup unsalted butter, melted

Instructions
 

Prepare the Soup Base:

    - In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables are softened.

      - Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the Broth:

          - Pour in the chicken broth, and add the dried thyme, dried parsley, salt, and pepper. Bring the mixture to a boil.

            Shred the Chicken:

              - While waiting for the soup to boil, shred the cooked chicken into bite-sized pieces. Once the broth is boiling, add the shredded chicken and frozen peas to the pot.

                Make the Dumpling Batter:

                  - In a separate bowl, combine the flour, baking powder, salt, and rosemary. Make a well in the center, then add the milk and melted butter. Mix until just combined; the batter will be slightly lumpy.

                    Add Dumplings:

                      - Reduce the soup to a simmer. Using a spoon, drop heaping tablespoons of the dumpling batter onto the surface of the simmering soup. They can be close together as they will expand while cooking.

                        Cook the Dumplings:
