1 cup cooked white rice (or quinoa for a healthier option)

1 can (10.5 oz) cream of mushroom soup (or homemade if preferred)

1 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1 cup frozen mixed vegetables (peas, carrots, and corn blend)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

1 teaspoon olive oil

1 cup breadcrumbs (for a crunchy topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Casserole Dish: Lightly grease a 9x13 inch casserole dish with olive oil to prevent sticking.

      Mix Base Ingredients: In a large mixing bowl, combine the shredded chicken, cooked rice, cream of mushroom soup, sour cream, and half of the cheddar cheese. Stir until well-combined.

        Add Vegetables and Spices: Fold in the frozen mixed vegetables, garlic powder, onion powder, paprika, salt, and pepper. Mix everything until the vegetables are evenly distributed.

          Transfer to Dish: Pour the chicken mixture into the prepared casserole dish, spreading it out evenly.

            Top with Cheese: Sprinkle the remaining cheddar cheese on top of the mixture.

              Prepare the Crunchy Topping: In a small bowl, mix the breadcrumbs with a tablespoon of olive oil for extra crispiness. Sprinkle this mixture evenly over the cheese layer.
