1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 medium onion, diced

2 cloves garlic, minced

2 cups mixed frozen vegetables (peas, carrots, corn)

4 cups low-sodium chicken broth

1 cup milk

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon black pepper

1/4 teaspoon salt (or to taste)

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 cup unsalted butter, melted

1/2 cup buttermilk

1 tablespoon fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, add a tablespoon of oil. Sauté the diced onion until translucent, about 3-4 minutes. Add the garlic and chicken pieces, cooking until the chicken is no longer pink (about 5-7 minutes).

      Add Vegetables and Broth: Stir in the frozen vegetables, chicken broth, milk, thyme, parsley, black pepper, and salt. Mix well and bring to a gentle simmer for about 5 minutes.

        Prepare the Dumpling Batter: In a mixing bowl, combine the flour, baking powder, baking soda, and a pinch of salt. In another bowl, whisk together the melted butter and buttermilk until smooth. Pour the wet ingredients into the dry ingredients, mixing just until combined (do not overmix).

          Combine and Bake: Pour the chicken and vegetable mixture into a greased 9x13-inch casserole dish. Drop spoonfuls of the dumpling batter evenly over the top of the mixture (they will expand while baking).
