9-12 lasagna noodles

2 cups cooked chicken, shredded (can use rotisserie chicken)

1 cup ricotta cheese

1 ½ cups mozzarella cheese, shredded (divided)

½ cup grated Parmesan cheese

2 cups Alfredo sauce (store-bought or homemade)

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package directions until al dente. Drain and lay them flat on a clean kitchen towel.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Rolls:

          - Take a cooked lasagna noodle and spread about 3 tablespoons of the chicken mixture evenly on the noodle.

            - Roll the noodle up tightly, starting from one end, and place it seam-side down in the baking dish.

              - Repeat with the remaining noodles and filling.

                Prepare the Baking Dish: Pour 1 cup of Alfredo sauce into the bottom of a 9x13 inch baking dish, spreading it evenly.

                  Add the Rolls: Place the lasagna rolls in the dish in a single layer. Pour the remaining Alfredo sauce over the top, ensuring each roll is covered. Sprinkle the remaining ½ cup of mozzarella cheese over the top.

                    Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

                      Garnish and Serve: Let the lasagna rolls cool for about 5 minutes. Sprinkle with chopped fresh parsley before serving.
