Ingredients

1 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups rolled oats

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (e.g., walnuts or pecans, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Mix until well combined and creamy. Beat in the egg and vanilla extract until smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and rolled oats. If you're adding chocolate chips or nuts, fold them into the dry mixture.

Combine Everything: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing, as this can affect the chewiness.

Scoop Cookies: Using a tablespoon or a cookie scoop, drop the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie as they will spread.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are still soft. They may look slightly underbaked but will firm up as they cool.

Cool Down: Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve warm or store in an airtight container at room temperature for up to one week.
