Ingredients

1 cup all-purpose flour

1/2 tsp baking powder

1/4 tsp salt

1 tsp cinnamon

1/2 cup unsalted butter, softened

1/2 cup light brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1/4 cup maple syrup

1/2 cup rolled oats

1/2 cup chopped pecans (optional)

1/4 cup powdered sugar (for dusting)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.

Cream Butter and Sugars: In a large mixing bowl, using a hand mixer or stand mixer, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

Add Wet Ingredients: Beat in the egg and vanilla extract until well combined, then pour in the maple syrup and mix again until smooth.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

Fold in Oats and Nuts: Gently fold in the rolled oats and chopped pecans (if using) until evenly distributed throughout the dough.

Scoop the Dough: Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving a couple of inches between each cookie to allow for spreading.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly underbaked; this is okay as they will continue to cook on the baking sheet.

Cool Down: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Dust with Powdered Sugar: Once cooled, lightly dust the cookies with powdered sugar for a sweet finishing touch.
