1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/4 cup granulated sugar (for rolling)

1 teaspoon ground cinnamon (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set this mixture aside.

      Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy. This should take about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until combined.

          Blend in Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix!

            Chill the Dough: Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes. This will help the cookies hold their shape while baking.

              Prepare Cinnamon Sugar Topping: In a small bowl, combine 1/4 cup of granulated sugar and 1 teaspoon of ground cinnamon. Set it aside for later.

                Form Cookies: Once the dough is chilled, scoop tablespoons of dough and roll them into balls. Roll each ball in the cinnamon-sugar mixture to coat thoroughly.
