1 cup fresh cherries, pitted and chopped

1 cup granulated sugar

1/4 cup corn syrup

1/2 cup heavy cream

1/4 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

2 cups powdered sugar, sifted

1 cup chopped pecans or walnuts (optional)

1/2 teaspoon salt

1/2 teaspoon almond extract (optional)

12 ounces dark chocolate, for coating

Prepare the Cherry Base: In a medium saucepan, combine the chopped cherries, granulated sugar, corn syrup, and salt. Stir well and cook over medium heat until the mixture begins to bubble. This will take about 5-7 minutes.

    Add the Cream: Reduce heat to low and carefully stir in the heavy cream. Continue to cook while stirring gently until the sugar has fully dissolved and the mixture thickens slightly (about another 5-6 minutes).

      Incorporate Cocoa and Flavor: Remove the saucepan from heat. Stir in cocoa powder, vanilla extract, and almond extract (if using) until well blended. Allow the mixture to cool to room temperature.

        Combine with Sifted Sugar: Once the mixture is cool, gradually add the sifted powdered sugar, mixing until a dough-like consistency forms. If using nuts, fold in the chopped pecans or walnuts at this stage.

          Shape the Mash: Using your hands, press the mixture into a rectangle or log shape, about 1-inch thick. If you prefer bite-sized pieces, shape them into small squares or balls. Wrap tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
