4 large bell peppers (any color)

1 cup cooked quinoa or brown rice

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 1/2 cups shredded cheese (cheddar or a blend)

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil. Place them upright in a baking dish.

    Make the Filling: In a large mixing bowl, combine the cooked quinoa or brown rice, black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well to ensure all ingredients are evenly distributed.
