Cheesy Spinach Stuffed Shells Bake

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup cottage cheese

1 cup shredded mozzarella cheese, plus extra for topping

½ cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, cottage cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until fully combined.

        Stuff the Shells: Using a spoon, carefully stuff each cooked shell with the cheese and spinach mixture. Place the stuffed shells in a 9x13 inch baking dish.

          Add Marinara Sauce: Evenly pour the marinara sauce over the stuffed shells, ensuring they are well coated. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your cheesy goodness!
