4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon lemon juice

Toothpicks or kitchen twine for securing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Make the Filling: In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, Italian herbs, salt, and pepper. Mix until well combined and smooth.

      Prepare the Chicken: Using a sharp knife, make a pocket in each chicken breast by slicing them horizontally but not all the way through. Season the outside of each chicken breast with salt, pepper, and a drizzle of olive oil.

        Stuff the Chicken: Carefully fill each chicken breast pocket with the cheesy spinach filling. Use toothpicks or kitchen twine to secure the openings, preventing the filling from spilling out during cooking.

          Sear the Chicken: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side, until golden brown.

            Bake the Chicken: Once seared, drizzle the lemon juice over the chicken breasts. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

              Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes before removing the toothpicks. Slice and serve warm, drizzled with any pan juices if desired.
