4 large russet potatoes, thinly sliced

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 medium onion, thinly sliced

3 cloves garlic, minced

2 cups heavy cream

1 cup whole milk

4 tablespoons unsalted butter

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon nutmeg

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: Grease a 9x13-inch baking dish with 1 tablespoon of butter, ensuring the sides are well coated.

      Make the Cheese Sauce:

        - In a medium saucepan, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sliced onion, sautéing until the onion becomes translucent.

          - Stir in the flour, cooking for about 1-2 minutes until it forms a paste. Gradually whisk in the heavy cream and whole milk, ensuring no lumps remain.

            - Bring the mixture to a gentle simmer and stir in the salt, black pepper, paprika, and nutmeg. Cook until the sauce thickens slightly, about 5-7 minutes. Remove from heat and stir in 1.5 cups of the cheddar cheese and all of the Gruyère until melted and smooth.

              Layer the Potatoes:

                - Start with a layer of potato slices at the bottom of the prepared dish. Pour a portion of the cheese sauce over the potatoes, ensuring they are evenly coated. Repeat this layering process until all potatoes and cheese sauce are used, finishing with a layer of sauce on top.

                  Add Remaining Cheese: Sprinkle the remaining 0.5 cups of sharp cheddar cheese on top of the final layer of sauce for a beautiful golden crust.

                    Bake: Cover the dish with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown, and the potatoes are tender when pierced with a fork.

                      Garnish and Serve: Once baked, remove from the oven and let it sit for about 10 minutes. Garnish with fresh chives or parsley before serving.
