Ingredients

1 pound breakfast sausage (mild or spicy, based on preference)

8 large eggs

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

4 cups cubed bread (French or sourdough work best)

2 cups shredded cheddar cheese

1 cup diced bell peppers (red or green for color)

½ cup chopped green onions

1 tablespoon butter (for greasing the baking dish)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter.

Cook the Sausage: In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain excess grease and set aside.

Mix Eggs and Milk: In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, black pepper, and paprika until well combined.

Combine Ingredients: In the greased baking dish, layer the cubed bread at the bottom. Evenly distribute the cooked sausage over the bread. Sprinkle the diced bell peppers and half of the chopped green onions on top. Pour the egg mixture over these layers.

Add Cheese: Gently press down to make sure the bread absorbs the egg mixture. Then, sprinkle the shredded cheddar cheese evenly over the top.

Bake: Cover the baking dish with aluminum foil (to avoid excess browning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and the center is set.

Cool & Serve: Remove the casserole from the oven and let it cool for about 10 minutes. Garnish with the remaining green onions before slicing and serving.

Enjoy: Serve warm, either as is or with a side of salsa for an extra kick!
