Cheesy Quesadillas

Ingredients
  

4 large flour tortillas

2 cups shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 cup cooked chicken, shredded (optional)

1 small onion, finely chopped

1 small red bell pepper, diced

2 cloves garlic, minced

1 teaspoon cumin powder

1 teaspoon chili powder

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Salsa, sour cream, and guacamole (for serving)

Instructions
 

Prepare the Filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper, sautéing for about 3-4 minutes until they become soft and translucent. Add the minced garlic, cumin powder, and chili powder, cooking for another minute until fragrant.

    Mix in the Cheese: Reduce the heat to low, and stir in the shredded chicken (if using), mozzarella, and cheddar cheese. Mix until the cheese is melted and the mixture is well combined. Remove from heat.

      Assemble Quesadillas: Lay out a tortilla on a flat surface. Spoon about 1/4 of the cheesy filling onto one half of the tortilla. Fold the other half over to form a semi-circle. Repeat with the remaining tortillas and filling.

        Cook the Quesadillas: Wipe out the skillet (or use a clean one) and place it back on medium heat. Place one quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the other quesadillas, adding more olive oil to the skillet if needed.

          Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and garnish with fresh cilantro. Serve warm with salsa, sour cream, and guacamole on the side.
