2 medium potatoes, peeled and diced

4 large eggs

1 cup shredded cheddar cheese (or your favorite cheese)

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh chives or parsley for garnish (optional)

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with a little salt and pepper. Cook until they are golden brown and tender, about 10-12 minutes, stirring occasionally. Once they are almost cooked through, transfer them to a plate and cover to keep warm.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper. Sauté for about 3-4 minutes, until the vegetables have softened. Add the minced garlic and cook for an additional minute until fragrant.
