4 low-carb tortillas

1 cup shredded mozzarella cheese

1/2 cup pepperoni slices

1/4 cup pizza sauce (plus extra for dipping)

1 teaspoon Italian seasoning

1 tablespoon olive oil

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tortillas: Lay out the low-carb tortillas on a clean surface.

      Add Pizza Sauce: Spread about 1 tablespoon of pizza sauce evenly over each tortilla, leaving a small border around the edges.

        Layer Ingredients: Sprinkle 1/4 cup of shredded mozzarella cheese over each tortilla. Evenly distribute the pepperoni slices on top of the cheese. Add Italian seasoning, garlic powder, and red pepper flakes if using.

          Roll Them Up: Starting from one end, carefully roll up each tortilla tightly, ensuring the filling stays inside.

            Brush with Oil: Lightly brush the outsides of each roll-up with olive oil.

              Slice and Arrange: Cut each roll-up into 1 to 2-inch pieces and arrange them on a baking sheet lined with parchment paper.

                Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and the edges of the tortillas are golden brown.

                  Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm with extra pizza sauce on the side for dipping.
