2 cups mashed potatoes (preferably chilled)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup sour cream

2 large eggs

1/2 cup breadcrumbs (preferably panko)

2 green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Cooking spray or oil for frying

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.

    Mix Ingredients: In a large mixing bowl, combine the chilled mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, and eggs. Stir until well combined.

      Season: Add the chopped green onions, garlic powder, onion powder, salt, and pepper into the mixture. Mix until evenly distributed.

        Form Puffs: Using a tablespoon or ice cream scoop, portion out the potato mixture and roll it into balls (about 1.5 inches in diameter). Dip each ball into the breadcrumbs, ensuring they are well coated.

          Arrange: Place the coated potato puffs on the prepared baking sheet, spacing them an inch apart.
