Cheesy Loaded Baked Potatoes

4 large russet potatoes

1 cup sour cream

1 ½ cups shredded sharp cheddar cheese

½ cup cooked and crumbled bacon

¼ cup finely chopped green onions

½ cup butter, melted

Salt and pepper to taste

Optional toppings: jalapeños, chives, hot sauce

Instructions
 

Preheat your oven to 425°F (220°C).

    Scrub the russet potatoes under cold running water. Pat them dry with a towel, then poke each potato several times with a fork to allow steam to escape while baking.

      Rub the potatoes with melted butter, and season them generously with salt and pepper.

        Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces through the flesh.

          Once baked, carefully remove the potatoes from the oven and allow them to cool for a few minutes.

            Cut a slit down the center of each potato, making sure not to cut all the way through. Gently squeeze the ends of the potato to open it up.

              Spoon in sour cream, then sprinkle with a generous amount of cheddar cheese, crumbled bacon, and green onions.

                Drizzle with any remaining melted butter and finish with additional toppings if desired, such as jalapeños or hot sauce.

                  Return the loaded potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
