8 small corn tortillas

4 large eggs

1 cup shredded cheddar cheese

1/2 cup diced roasted hatch green chiles (canned or fresh)

1/4 cup finely chopped onion

1/4 cup fresh cilantro, chopped

1/2 tsp ground cumin

Salt and pepper to taste

2 tbsp olive oil

1 avocado, sliced

Salsa (optional)

Instructions
 

Prep the Ingredients: If using fresh hatch chiles, roast them under the broiler or over an open flame until the skin is charred. Allow them to cool, then peel and dice. Chop the onions and cilantro, and slice the avocado.

    Cook the Eggs: In a medium bowl, whisk the eggs, cumin, salt, and pepper together until well combined. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once the oil is hot, pour in the egg mixture and cook gently, stirring occasionally until the eggs are softly scrambled. Remove from heat and fold in the diced hatch chiles and half of the cheddar cheese, allowing the warmth to melt the cheese slightly.

      Warm the Tortillas: In another skillet, heat the remaining tablespoon of olive oil. Warm the corn tortillas one at a time for about 30 seconds on each side until they are pliable. Keep them warm by wrapping them in a clean kitchen towel.

        Assemble the Tacos: Place a generous spoonful of the cheesy hatch chili egg mixture onto each warm tortilla. Top each taco with a sprinkle of the remaining cheddar cheese and a handful of chopped onions and cilantro.

          Garnish and Serve: Add a few slices of fresh avocado on top of the tacos. If desired, serve with salsa on the side for added flavor. Enjoy immediately while warm!
