Cheesy Ham & Spinach Casserole

2 cups cooked ham, diced

3 cups fresh spinach, roughly chopped

2 cups cooked pasta (penne or rotini work best)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup cream cheese, softened

1 cup milk

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

½ teaspoon paprika

1 teaspoon olive oil

⅓ cup grated Parmesan cheese for topping

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, until wilted. Remove from heat and set aside.

      Prepare Filling: In a large mixing bowl, combine the diced ham, cooked pasta, sautéed spinach, cheddar cheese, mozzarella cheese, and garlic and onion powders. Mix well to distribute the ingredients evenly.

        Make the Creamy Mixture: In another bowl, whisk together the cream cheese, milk, eggs, pepper, salt, and paprika until smooth. This will create a rich and creamy base.

          Combine: Pour the creamy mixture over the ham and spinach filling, and gently stir until everything is well coated.

            Transfer to Casserole Dish: Pour the entire mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

              Top with Parmesan: Sprinkle the grated Parmesan cheese evenly over the top of the casserole.

                Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese on top is bubbly and golden brown.

                  Cool and Serve: Once baked, remove from the oven and let it cool for about 5 minutes before serving. This will allow the casserole to set slightly for easier slicing.
