Cheesy Chicken & Spinach Enchiladas

For the Chicken Filling:

2 cups cooked chicken, shredded (rotisserie works great)

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

For the Enchiladas:

8 small flour tortillas

2 cups red enchilada sauce (store-bought or homemade)

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Filling:

    - In a large bowl, mix the shredded chicken, chopped spinach, cream cheese, Monterey Jack cheese, garlic powder, onion powder, cumin, salt, and pepper until well combined.

      Assemble the Enchiladas:

        - Preheat your oven to 350°F (175°C).

          - Spread about 1/2 cup of the enchilada sauce on the bottom of a large baking dish.

            - Take a tortilla and place about 1/3 cup of the chicken and spinach filling in the center. Roll the tortilla tightly and place seam-side down in the baking dish. Repeat with the remaining tortillas and filling.

              Add the Sauce:

                - Once all the enchiladas are in the baking dish, pour the remaining enchilada sauce evenly over the top.

                  - Sprinkle the shredded cheddar cheese on top of the sauce.

                    Bake:

                      - Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes.

                        - Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                          Serve:

                            - Once out of the oven, let the enchiladas cool for a few minutes. Garnish with freshly chopped cilantro before serving. Enjoy with a side of sour cream or guacamole if desired!
