Cheesy Chicken Hashbrown Casserole

1 (30 oz) bag frozen hashbrowns, thawed

2 cups cooked chicken, shredded or cubed

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 small onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil

1 cup panko bread crumbs

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes). Remove from the heat and set aside.

      Prepare the Chicken Mixture: In a large mixing bowl, combine the cooked chicken, thawed hashbrowns, sautéed onion and garlic, shredded cheddar cheese (reserve 1 cup for topping), sour cream, cream of chicken soup, paprika, black pepper, and salt. Mix until well combined.

        Assemble the Casserole: Lightly grease a 9x13-inch baking dish. Pour the chicken and hashbrown mixture into the dish, spreading it evenly.

          Add the Topping: In a separate bowl, combine the reserved cup of cheddar cheese with the panko bread crumbs. Sprinkle this mixture evenly over the casserole.

            Bake: Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.
