For the crust:

1 ½ cups chocolate cookie crumbs (like Oreo cookies)

½ cup unsalted butter, melted

3 tablespoons granulated sugar

For the cheesecake filling:

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

4 large eggs

1 cup sour cream

1 teaspoon vanilla extract

1 cup Godiva chocolate liqueur

8 oz semi-sweet chocolate, melted and cooled

For the chocolate ganache topping:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1 tablespoon Godiva chocolate liqueur (optional)

For garnish:

Chocolate shavings or curls

Whipped cream

Instructions
 

Prepare the crust:

    - Preheat the oven to 325°F (160°C).

      - In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool while you prepare the filling.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

              - Gradually add in the granulated sugar, beating until well combined.

                - Add in the eggs, one at a time, mixing on low speed to avoid incorporating too much air. Scrape down the sides of the bowl as needed.

                  - Mix in the sour cream, vanilla extract, and Godiva chocolate liqueur until smooth.

                    - Finally, fold in the melted and cooled semi-sweet chocolate until fully incorporated.

                      Bake the cheesecake:

                        - Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

                          - Bake in the preheated oven for 55-65 minutes, or until the edges are set but the center is still slightly wobbly.

                            - Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.

                              Cool and chill:

                                - Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.

                                  Prepare the ganache:

                                    - In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the chopped semi-sweet chocolate. Let it sit for a few minutes before stirring until smooth.

                                      - Stir in the Godiva chocolate liqueur if using. Allow the ganache to cool slightly before pouring it over the chilled cheesecake.

                                        Garnish and serve:

                                          - Once the ganache has set, remove the sides of the springform pan.

                                            - Garnish the top of the cheesecake with chocolate shavings or curls and dollops of whipped cream as desired.
