12 large jalapeño peppers

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp black pepper

1/2 cup breadcrumbs (optional for topping)

Olive oil for drizzling

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wearing gloves (to protect your hands from the heat), slice the jalapeños in half lengthwise and remove the seeds and membranes for less heat, if desired.

      In a mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled feta, green onions, minced garlic, smoked paprika, and black pepper. Mix until well combined and creamy.

        Using a small spoon or a piping bag, fill each jalapeño half with the cheese mixture, pressing slightly to pack it in.

          If you like a crispy topping, sprinkle breadcrumbs over each stuffed jalapeño and drizzle a little olive oil on top.

            Place the stuffed jalapeños on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the cheese is bubbly.

              Remove from the oven and let them cool slightly. Garnish with fresh cilantro if desired. Serve warm and enjoy!
