Ingredients

1 sheet of puff pastry (thawed)

2 large yellow onions (thinly sliced)

3 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

4 ounces goat cheese (crumbled)

1 large egg

1 tablespoon heavy cream

Salt and pepper to taste

Fresh thyme sprigs for garnish (optional)

Balsamic glaze for drizzling (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Caramelize the Onions: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring frequently, until the onions are soft and golden brown, about 20-25 minutes. Add the thyme in the last 5 minutes of cooking.

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry to fit a 9-inch tart pan. Gently press it into the pan and trim any excess pastry from the edges. Prick the bottom with a fork to prevent puffing.

Assemble the Tart: Spread the caramelized onions evenly over the pastry. Sprinkle the crumbled goat cheese on top.

Make the Egg Mixture: In a small bowl, whisk together the egg and heavy cream. Season with salt and pepper, then pour the mixture evenly over the tart.

Bake the Tart: Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and the egg mixture is set.

Cool and Serve: Once done, remove the tart from the oven and let it cool for a few minutes. Garnish with fresh thyme sprigs and a drizzle of balsamic glaze, if desired. Slice and serve warm or at room temperature.
