4 slices of thick-cut brioche or challah bread

2 ripe bananas, sliced

2 large eggs

1/2 cup whole milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

2 tbsp unsalted butter

1/4 cup brown sugar

A pinch of salt

Maple syrup (for serving)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined. Set aside.

    Caramelize the bananas: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced bananas and cook gently for about 2 minutes. Sprinkle the brown sugar over the bananas and stir carefully until the sugar dissolves and creates a caramel sauce (about 2-3 minutes). Remove from heat and set aside.

      Soak the bread: Dip each slice of brioche (or challah) in the egg mixture, ensuring both sides are coated. Allow the excess to drip off.

        Cook the French toast: In the same skillet you used for the bananas, melt the remaining 1 tablespoon of butter over medium heat. Add the soaked bread slices and cook until golden brown on one side, about 3-4 minutes. Flip and cook the other side, adding more butter as needed.
