Ingredients

4 slices of thick-cut brioche bread

2 large eggs

1/2 cup whole milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

2 tablespoons unsalted butter

2 ripe bananas, sliced

1/4 cup brown sugar

1/4 cup maple syrup (plus extra for serving)

Pinch of salt

Optional: Whipped cream or powdered sugar for garnish

Optional: Chopped nuts (walnuts or pecans) for topping

Instructions

Prepare the French Toast Mixture: In a medium bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until fully combined. Set aside.

Caramelize the Bananas: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced bananas and sprinkle the brown sugar over them. Cook gently for about 2-3 minutes, stirring occasionally until the bananas soften and caramelize. Remove from heat and set aside.

Dip the Bread: Heat a non-stick skillet or griddle over medium heat. While it heats, take one slice of brioche bread and dip it into the egg mixture, ensuring both sides are well-coated. Allow excess mixture to drip off.

Cook the French Toast: In the heated skillet, add another tablespoon of butter. Place the dipped brioche in the skillet and cook for 3-4 minutes on each side until golden brown and slightly crispy. Repeat this process with the remaining slices of bread, adding more butter as needed.

Assembly: Once the French toast slices are cooked, place them on serving plates. Spoon the caramelized bananas over each slice, making sure to drizzle some of the caramel sauce left in the skillet on top as well.

Serve: Drizzle with maple syrup and garnish with whipped cream or powdered sugar if desired. Sprinkle with chopped nuts for extra crunch.

Enjoy: Serve warm and enjoy this decadent sweet morning treat!
