2 ripe bananas, sliced

¼ cup brown sugar

1 teaspoon cinnamon

4 tablespoons unsalted butter

2 tablespoons dark rum (optional)

1 tablespoon vanilla extract

Maple syrup

Chopped pecans or walnuts (optional)

Instructions
 

Make the Pancake Batter:

    - In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

      - In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Mix well.

        - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing; some lumps are okay.

          Prepare the Caramelized Bananas:

            - In a skillet over medium heat, melt 4 tablespoons of butter.

              - Add the brown sugar and cinnamon, stirring until the sugar dissolves.

                - Add the sliced bananas and cook for 2-3 minutes until they start to soften.

                  - If using, carefully add the dark rum and allow it to simmer for an additional minute until slightly thickened. Remove from heat and stir in the vanilla extract.

                    Cook the Pancakes:

                      - In a non-stick skillet or griddle, heat a little butter over medium heat.

                        - Pour about ¼ cup of pancake batter onto the skillet for each pancake.

                          - Cook until bubbles form on the surface of the pancake, approximately 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
