1 can (15 oz) pure pumpkin puree

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup heavy cream

3 large eggs

1 teaspoon vanilla extract

1/4 teaspoon ground ginger

1/4 teaspoon salt

For the Pecan Topping:

1 cup pecans, chopped

1 cup all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup buttermilk

1 teaspoon vanilla extract

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter

1/2 cup heavy cream

1 teaspoon vanilla extract

Pinch of salt

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Pumpkin Filling: In a large mixing bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined. Pour this mixture into a greased 9x13 inch baking dish.

      Make Pecan Topping: In another bowl, combine the chopped pecans, flour, granulated sugar, baking powder, and salt. Pour in the melted butter, buttermilk, and vanilla extract. Mix until just combined; don’t over-mix.

        Layer the Topping: Drop spoonfuls of the pecan topping mixture over the pumpkin filling. Don’t worry about it being perfectly even—it will spread as it bakes.

          Bake: Place the cobbler in the preheated oven and bake for 40-45 minutes or until the topping is lightly golden and a toothpick inserted into the topping comes out clean.
