4 ripe medium tomatoes (preferably heirloom or vine-ripened)

8 oz fresh mozzarella cheese (preferably buffalo mozzarella)

1 cup fresh basil leaves

1/4 cup extra virgin olive oil

1/4 cup balsamic vinegar

1 tablespoon honey (optional)

Salt, to taste

Freshly cracked black pepper, to taste

Prep the Ingredients: Begin by washing the tomatoes and basil leaves. Slice the tomatoes into 1/4-inch thick slices, and the mozzarella into similar-sized slices.

    Make the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey (if using).
