Ingredients

2 pieces of store-bought flatbread or naan

2 cups fresh mozzarella cheese, sliced

1 large ripe tomato, thinly sliced

1 cup fresh basil leaves

2 tablespoons extra virgin olive oil

1 tablespoon balsamic reduction (store-bought or homemade)

Salt and freshly ground black pepper, to taste

½ teaspoon garlic powder (optional)

Red pepper flakes, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C). If using a pizza stone, place it in the oven while it heats up.

Prepare the Flatbread: Place the flatbreads or naan on a baking sheet or pizza peel for easier transfer to the oven.

Add Cheese: Evenly distribute the fresh mozzarella slices over each flatbread, leaving a small border around the edges.

Layer Tomatoes: Arrange the thin tomato slices on top of the cheese, overlapping slightly for an even coverage.

Season: Drizzle the olive oil over the toppings. Sprinkle with salt, pepper, and garlic powder if using.

Bake: Carefully transfer the flatbreads to the oven (or onto the preheated pizza stone) and bake for 10-12 minutes, or until the cheese is bubbly and slightly golden.

Add Fresh Basil: Once the flatbreads are out of the oven, immediately top with fresh basil leaves. The heat from the pizza will wilt the basil just enough to enhance its aroma without losing its vibrant flavor.

Finish with Balsamic: Drizzle the balsamic reduction over the top, and if desired, sprinkle with red pepper flakes for an extra kick.

Slice and Serve: Allow to cool for a minute, then slice into wedges. Serve warm and enjoy!
