1 cup orange peels (thinly sliced)

1 cup granulated sugar

1/2 cup water

1 cup dark chocolate (at least 70% cocoa, chopped)

1/2 teaspoon sea salt (plus extra for garnish)

1/4 teaspoon vanilla extract

1/2 cup crushed nuts (such as pistachios or almonds, optional for topping)

Instructions
 

Prepare the Candied Orange Peel:

    - Start by blanching the orange peels. Place them in a pot of boiling water for 10 minutes to soften the bitterness. Drain and rinse under cold water.

      - In a medium saucepan, combine the granulated sugar and water. Bring to a simmer over medium heat, stirring until the sugar dissolves.

        - Add the blanched orange peels to the sugar syrup. Simmer for about 45 minutes, stirring occasionally, until the peels become translucent and tender.

          - Once done, remove the peels from the syrup and place them on a wire rack to cool and dry for at least 1 hour.

            Melt the Dark Chocolate:

              - While the peels are cooling, set up a double boiler. Fill a saucepan with a couple of inches of water and bring to a simmer. Place a heatproof bowl over the saucepan, ensuring it doesn’t touch the water.

                - Add the chopped dark chocolate to the bowl and stir gently as it melts. Once fully melted, remove from heat and stir in the sea salt and vanilla extract.

                  Assemble the Bark:

                    - Line a baking sheet with parchment paper. Pour the melted dark chocolate onto the sheet and spread it into an even layer with a spatula, about 1/4 inch thick.

                      - Lay the candied orange peels on top of the chocolate, pressing them lightly into the surface. If using crushed nuts, sprinkle them over the chocolate bark for added texture and flavor.

                        - Sprinkle a small pinch of sea salt over the top for contrast.

                          Set and Serve:
